SALMON TRAOT

The ever industrious farmers of Lebanon, eager to diversify and survive the fluctuations of other crops, humbly began farming salmon trout. Situated high above the mountains of the Beqaa Valley, 800 meters above sea-level, the streams unearthed by our farmers were being fed by the mighty Assi (Orontes) River. The cold and pure spring waters became a perfect vessel to gently nurture a most delicious species, the salmon trout.
Surrounded by olive trees, bushels of capers and berries, and the odd stem of rocket, these streams are an ideal natural habitat for sustainably farming salmon trou

Salmon trout belongs to the rainbow trout family (Oncorhynchus mykiss). It has a less visible rainbow streak on its side typical of its namesake, and more closely resembles steel-head trout, but with a less hooked snout.
These marvelous creatures grow to about a kilo in six short months, thanks to the purity of the water and the special care and keen attention given to them by our dedicated farmer

With an emphasis on minimizing the impact of the farming process on the environment, the A.R. And what a great result it is. The flesh is succulent and sweet, leaner than salmon, but just as deep in flavor with distinct lines of omega-3 rich fat and glistening coral flesh. Whether as sushi, or grilled on native cedar planks to a pink perfection, this fish is indeed a luxury to consume

We can also supply rainbow trout with the wihte flesh, to be served whole, or as fillets. These are smaller fish, not getting bigger than 900 grams.
